Lunch in 2 Minutes Flat

Hope today treated you well! I just got back from class- OK, an hour ago, but I'm all ready to blog and bed next. I snacked on some watermelon out of an enormous tupperware:




Then I proceeded to 'make' my lunch. I used some leftover tuna salad from this weekend:




  • 1 can tuna
  • 1 egg
  • cilantro
  • cumin
  • salt
  • pepper
  • plain yogurt

Then I topped the mixture with about 2 cups of organic mixed greens:





I'll mix this up in a larger bowl at work tomorrow, and lunch will be served!

Since school is back in for me, it means that there is less time to prepare meals and more time to dedicate to prep in my free time. I have started meal planning this week- mostly for Mike. He came home today and joked that he ate what I wrote down for him.

I am ALLL about meal prep.. Sundays are my big "chopping etc" days! It just makes things sooo much easier. Tonight Im making spaghetti squash BUT i made it up last night, so it's just a little bit of re-heating action and we are set! :)
