I go to work early on Wednesdays so that I can leave 90 minutes early to get to my grad school class. It seems to be an even exchange, despite having to get up at the crack of dawn. I take my breakfast to go and today I had the luxury of grabbing the breakfast I slaved over threw together last night.
I have always been a fan of Gina's protein cookies and decided to put a seasonal spin on my version!
Aren't these pomegranate seeds pretty?
You make them ugly by adding:
- 1/4 cup nonfat plain yogurt
- 1/2 scoop protein powder
- 1 tbsp almond butter
- 1/2 cup oats
Then you dump it out on some parchment paper or plastic wrap and form a cookie shape
It hardens overnight and is ready to go in the morning. I like to stick it in the freezer for 15 or so minutes to get ready for the road.
Do you make protein cookies? What do you put in them?

Yum! I don't make protein cookies, as I get plenty of protein in my diet. These do look fantastic though, great recipe, with few ingredients, just how I like it.
these look soo good! I have made protein cookies before combining oats, rotein powder, dried fruit and nut butter with a little water and freeze them until hardened! soo good!!
I am going to attempt to get the pom seeds out of a pom tonight - yikes ... I'm scared!

I love making proteing cookies with chocolate LMM, Milk, PB, Oats, and 1/2 a Banana YUUUUUMS!

These looks tasty actually. I have never made a protein cookie but love how easy they are! AND it more fun to eat a breakfast "cookie". lol Maybe I should start making them!
Actually you can keep them pretty too with a salad I posted that add nuts and just a bit of syrup!
