What have you done today?

What have you done to increase your H1N1 exposure today?  I bet not nearly as much as I have!

First of all, our bridge is broken- a big deal when you live in the 'burbs and work in the city. Us country folk have to get to work and do not appreciate those who decided to take the train instead of driving all of a sudden! I had the pleasure of being pressed up against 1,000 of my new closest friends and was leaned back over a seat so far while standing that my abs were shaking to hold me up.

Next, I went to visit Target to get some cupcake supplies. Why did I go to the promise land 2 days before Halloween? Every snotty nosed kid and their parents were picking out last minute costumes. I was virtuous and only picking up my baking supplies 2 days before. It was planned.

Finally, I went to the gym tonight, where I peacefully tried to run while the two people next to me were hacking like crazy. I think all these things are driving me crazy since I decided not to get a flu shot today and am convinced I'll get the swine flu any minute now.

On to more pleasant things- CUPCAKES!

More cupcakes...

As a disclaimer I don't bake and if I do, I always screw with the recipe.  It's just how I roll.  I made these cupcakes for my Apple Ma's day care kids for a killer Halloween party to be held tomorrow.  VIP access only.  
I healthified the box instructions by adding applesauce instead of oil.  Kids today get enough fats, right?  It's a good thing the kids that will be eating these can't draw inside the lines because I can't either. 

Since I don't bake, I don't make frosting either.  We actually don't have any butter in the house and I wouldn't even know what to start with.  I picked the two that sounded the healthiest:
Dark Chocolate for the antioxidants (I hate frosting but had a couple of spoonfuls to test it)


Cream cheese- because it's the smarter alternative to butter.  And buttercream just sounds bad.

I know none of these treats are healthy, but these little guys will be hyped up on sugar for the next 48 hours anyways, so why not?  You're only a kid once.

uhhh can I have one?? they look sooo cute and delicious! great idea sneaking in the applesauce and I am sure the kids cannot tell!!

I work at a school, and one of our students came into the office and told us he has h1n1. I wanted to throw the bottle of purell at him!

HAHA I loved this post. Those cupcakes looks really yummy and I am sure they taste just as good.

I don't get flu shots either. I always plan to get one but never do lol

Thanks girls. You are all too sweet. I actually hate eating cupcakes- cake and frosting are too messy and sweet. But I love making them and subjecting others to the fun!

Those cup cakes are adorable! I never knew they made dark chocolate icing! Must check that out! I never got a flu shot before either! No reason to start now haha.

Just an FYI from your annoying RD blog friend...there are probably no more antioxidants in that icing than in regular chocolate icing. They usually just darked the chocolate and add some other things so they can call it "dark chocolate". Annoying.

You are so funny about how you have exposed yourself to H1N1. I have only washed my hands once today, does that count? Ewwww...gross, I know. I've been home all day and I just...ok enough said.

I know, I know Miss RD! I got it for the flavor only. Those frosting ingredients are pretty scary but I was rationalizing :)

It's OK to not wash your hands if you aren't touching other people in the comfort of your own home!

I adore cupcakes!! (I adore alot of things sugar-related hmmmm)...and YAY to the cream cheese frosting...I am seriously addicted - I found it a few months ago and seriously just eat it out of the tub with a fork...taste sooo good with a carrot cupcake or muffin...or anything carby haha!! but the sugar buzz after is like a hangover - :( oh welllll

I got a little taste of those cute and yummy cupcakes today! The nephew and I loved them! Benny had 3 1/2 and I had the other half. Yes, it was a little bit overboard but what can I say, it's almost Halloween so we'll let him overdose on tasty treats :) gracias!!!
