A Manly Lunch
I'm sitting at the San Francisco airport, waiting for my delayed flight to Dallas to arrive. Since you won't get a play-by-play of my meals, I decided to share the husband's lunch for today. I took pictures last night so that I wouldn't leave ya hanging!
I love cooking and I love cooking balanced meals for others to enjoy. Right now, my audience includes my husband and I've been able to use him as a guinea pig for my cooking. I have had some BAD flops (green cookies, anyone?) and some good meals.

I have a problem in improvising and not following recipies, so it's always interesting.

Today for lunch, the husband is eating Pesto-Cranberry Chicken with French Green Beans and Roasted Baby Potatoes. This was a quick meal- and an attempt to use the rest of the pesto I bought from Trader Joes. There is really no recipe for the french beans- I just roasted them in the oven with a little olive oil, garlic salt and pepper.

Pesto Chicken:
- Take 4 chicken breasts or thighs and rub in pesto sauce on a baking sheet.
- Pre-heat oven to 350 degrees
- Bake covered for 20-25 minutes, then uncover and add dried cranberries and bake for another 10 minutes
- *Important step- stab with a fork to make sure it's ready- salmonella poisoining is not hot!
Roasted Baby Potatoes
- Boil potatoes for about 20 minutes, or until almost cooked
- Heat 1 tbsp olive oil and crushed garlic in a pan and add potatoes
- Brown potatoes until golden and slightly crispy
I'm trying to convince the hubby to do a guest post and he's almost convinced! I did it for him this time and I'm at least hoping for a comment!

do you peel the potatoes or leave them as is and just chop them up?

I leave the skin on the baby potatoes- it crisps up and scores extra man food points!
There are two reasons for posting this:
1. to get my feet wet with my first official comment to my wife's blog in mental preparation of assuming the responsibility of a guest blogger
2. to express my excitement about lunch. It's coming up soon! Yay!

Good luck with the convincing! I've actually thought about having Nick do the same, but I have not asked. You should keep pushing it, for sure.
The meal sounds wonderful, he's lucky to have you as his personal chef. I make Nick PB&J for lunch literally everyday!
I would be thrilled to have PB&J every day! Actually, husband would never eat that- or he would get it too. He has an aversion to nut butter- he's glad I love him for other reasons!
