One Hour= 4 Meals

Tonight I got home with a goal to get some more meals set for the week. Tomorrow I have grad school for the second time this week and it messes with my head and my schedule!


Since we have been home, I have been itching to cook something Costa Rican-inspired and tonight was my best opportunity to get it done!


I started with some basic ingredients:

  • Free range chicken broth
  • Rotel diced tomatoes,
  • Fire roasted green chili:



Also un-pictured are:

  • Black beans
  • 1/4 onion
  • 1 diced carrot
  • Cumin
  • Salt
  • Pepper
How I made the chicken dish:

I diced some chicken thighs, browned some onions and carrots, and then added the chicken to brown. After a few minutes, I added the chicken broth, cumin, salt, and pepper until it turned into a steamy mess:





I let this simmer in the broth and chili sauce until it reduced and soaked in the flavor. I also made some black beans by heating up some black beans with some Rotel- easy and quick!


While this was going, I also cut up an enormous sweet potato for fries:





I also cut up a pepper and two carrots to roast at the same time. I hate washing extra dishes, so I was able to use the same cookie sheet! Win/win situation in my book!






Once everything was prepared, I ended up with 4 meals!


I topped some mixed greens with the roasted veggies and beans for myself:









I made 3 rice, beans, and chicken dishes for the husband. These will be eaten for lunch, dinner, and possibly another lunch over the next three days and I'm glad he likes leftovers! I'll be digging into the sweet potato fries myself!








Off to bed before I get divorced for blogging too much!
