Snobby Tuna Melt

I started this week off with a really busy Monday!  At least it made the day go by fast!
I was dropped off at the gym on the way home.  My husband likes it when I work out because 'it makes me nicer'.  He's totally right.

I played an unintentional game of Workout ADD- partially due to the jerkface who kicked me off the treadmill after only 10 minutes.  Bad gym karma, if you ask me! Here is what I ended up doing:
  • 10 minutes treadmill intervals
  • 11 minutes stairclimber intervals
  • 12 minutes treadmill intervals 
  • 5 minutes bike cooldown
  • Assisted pull-ups
  • Assisted dips
  • Abs
  • Stretch
I came home starving and grabbed the first thing I could get my hands on- my version of a tuna melt.


I used the tuna salad that I made this weekend for easy meal prep:
  • 3 eggs
  • 2 cans of tuna
  • 1 can of drained and rinsed corn
  • 1 tbsp pesto
  • 1/4 chopped red onion
  • 2 tbsp plain yogurt OR Miracle Whip (don't judge- hubby loves MW)
 I topped two slices of Nature's Pride bread with about 1.5 Tbsp each of tuna salad, goat cheese, and a tomato from our garden.  I broiled this for 5 minutes while I steamed some french green bean 'fries' in the microwave- easy and healthy!

great idea with the tomatoes on top! i haven't had tuna in a long time.

My boyfriend says the same thing! I am so much nicer after I workout!! Love tuna and goat cheese! Yum!
