Tabouli With a Twist

Hope you are all having a great week.  Mine has been muy interesante, but I'm a positive girl, so let's rock this joint with Salad #3 of the week! 
I'm a huge fan of Mediterranean foods and tabouli is a huge favorite of mine!  I use a really easy recipe based on this one from Food Network!

Here is where I ended up with my tabouli recipe:
  • 1/2 cup organic quinoa
  • 1 cup minced fresh parsley leaves
  • 1/2 cup finely chopped green onion
  • 3 tomatoes, diced
  • 2 cucumbers, seeded and diced
  • 1 tablespoons olive oil
  • 3 tablespoons lemon juice 
  • 1 teaspoons sea salt and pepper to taste
You'll see that I used quinoa, green onion in place of yellow onion, less olive oil, and a ton of lemon juice.  I also chopped everything up really chunky because my favorite part of the dish is the veggie goodness! 
Here is what the final product looked like:
 I made it on Sunday and the flavors came together wonderfully when I served it up for dinner tonight:
I served the tabouli on a bed of arugula (love the spicy taste) and served it along with a couple of fresh tomatoes, hummus, and peas for dipping.  I wish I had some fresh pita for dipping, but a girl can't have anything!

How about you girls/guys?  Do you like Mediterranean foods?  I love it!  It seems like a lot of the foods I grew up with have a lot of influence and I am a fan of anything covered in hummus :)

P.S. I still can't believe I made such a blog blooper earlier!  Ya'll need to call me out when I don't make sense :)

Wow! I love tabouli and I love quiona! I usually make tabouli with Near East mix, but making it with quinoa is a great idea!

Love Medi food...my mom makes tabbouleh for summer dinner parties, and I always end up picking out the olives and tomatoes :) I giggled at your comment about the Mikes- I guess only time will tell with my Mike!! Have a great hump day love!!

I ADORE Mediterranean food. One of my favorite restaurants is Aladdin's Eatery close to where I live. Just like you, I am in love with Hummus. If I could, I would swim in it. :)
