Tapas- My Way

This weekend I wanted to make food that looked expensive, but wasn't.  I didn't do this for any reason except for my love of appetizers at restaurants, particularly when going out for tapas.  Tapas are my favorite way of eating because I love sharing- well, mostly when others share with me. My recent favorite meal was the ceviche I had at a Cuban restaurant.  I don't know what made me do it (probably because I'm obsessed with food),  but I woke up on Saturday morning with the need to recreate it . 
It was so easy even I could do it!
Ingredients:
*2 cups of your favorite mango salsa (I used one from Costco, but Trader Joe's has a good one too)
*1/4 cup chopped red onion
*Fresh cilantro
*Sprinkle of cumin, chili powder, and salt and pepper
*Defrosted cooked shrimp (I used about 1 cup)
*Plantain chips for scoopage (I bought mine at Trader Joe's)

Instructions:
-Chop up onion, dump in all ingredients, and refrigerate for at least 3 hours

I served it in a wine glass since we are klassy and don't have martini glasses:
I really enjoyed this, and so did my hubby.  (Sidenote: ceviche is Spanish and Spain won the World Cup!  How did I know?  I just did.  I didn't make any Dutch Food, OK?)
So what did I serve with this ceviche?  Homemade spring rolls of course!  Did I mention I kinda do a fusion thing a LOT?  I serve Russian, Latin American, Asian, and random cuisines together.  It just works.  Don't tell me otherwise.

I've actually never had ceviche! I think I would love it. my husband would hate it.

Best thing I did this weekend was was just getting everything in order for our big move!!!! Im so happy we found a place and signed the papers! Woot Woot!

Yes I am so happy Mikes boss and wife are so cool, the other people I met at the firm so far are cool as ever too!

Ive never had ceviche and I guess I didnt really know what it was until I just read your blog--looks good though!

The best part of my weekend was just being able to be with my husband and do all our activities together. I feel like we had a good mix of relaxing, getting things done, and exploring the town!

I have never had ceviche! I thought that it was with raw seafood, which made me afraid to eat it. The fact that it is with cooked shrimp in your recipe makes it sound appetizing to me!

i wish i was a ceviche person becuase this dish looks great! i would tear up some shrimp though... i just have issues with fruit in savory dishes... but moreso that i have issues alltogether,
its beautifully presented though!

When I was in culinary school, we spent like two weeks making all sorts of different kinds of tapas and ceviches. I feel like its sort of "overplayed" in the culinary world. If you see any episode of top chef, at least two of the dishes are ceviches. But I do love making it. I make it with MahiMahi and scallops a lot (well, when they are on sale) and I use all sorts of different acidic agents like grapefruits or blood oranges. Anyhow, yours look yummy, I've seen millions of ceviches!

I should clarify that mine is not really ceviche because I didn't use raw fish- I wasn't down with that quite yet!

I love ceviche! I'd never had it until my best guy friend introduced me to it this spring. Delicious. I have to say, I'm not a big tapas person though...if something is good, I don't want to share! Hope you've had a great Monday!

I don't think I've ever had ceviche- now I have to! I too love me some tapas- it is the perfect way to eat in my opinion. A little bit of everything that is delicious!

Yep, this food sure does look expensive!! YOu reached your goal :) It looks tasty too, especially those spring rolls. I've been really into spring rolls at grocery stores lately (haven't made my own yet, but I will one day!).
