New Secret Ingredient

I have to tell you guys something I discovered- it's not really a new food or a new workout, but more of an old classic.  I haven't bought it in years and this past weekend it finally made its way on my grocery list for my Project Food Blog EntryButter.  Let's say it again- BUTTER.  Somewhere in this whole healthy eating adventure, I decided butter was a no-go in our cart, each and every week.  Something about bad fats and other mumbo jumbo made me find all kinds of replacements for it in baked goods.  But you know what?  Butter makes delicious things like brownies.
All you do is combine it with this Trader Joe's Truffle Baking Mix, a couple of eggs, and water, and magic happens.
Half of the pan brownies are gone, and I am not even the responsible party. Sorry husband- you have been missing out for years.  I might have to go browse some Paula Deen cookbooks to make up for lost time.

fantastic use for butter: put two big servings of veggies (i do this with raw carrots, raw asparagus, or frozen green beans) into a frying pan. add water so that the veggies are about halfway covered, salt, pepper, and about a tablespoon of butter. stir as the veggies cook... the water evaporates as it cooks the veggies and the butter cooks in and they are magically delicious. when the water is gone the veggies are usually ready (check to be sure though) two people = an extra 50 calories or so each and they taste sooo buttery you feel like paula dean made 'em.

Those truffle brownies are A-mazing!! I like to make them in muffins tins.

mmmm yes! I love Kerrygold butter. I swear to God it's the best tasting butter on the planet and makes life so much better.

Oh yes, butter is fabulous. I actually buy the Smart Balance half butter half margarine blend, just because it's really tasty and Nick happens to use a lot of butter when he DOES use it. It works really well in baking and cooking recipes.
