I made stuffed green peppers, sweet potato fries, and roasted carrots.This meal took 40 minutes to bake, but only 10 minutes of prep.
Stuffed green peppers:
First I sauteed some carrots, red onions, salt, pepper, and green pepper in a little bit of olive oil to let everything carmelize. Once ready, I stuffed the peppers, topped with goat cheese, and threw it in the oven for about 15 minutes- done!
Roasted Carrots and Sweet Potato Fries:
Super easy- just cut and bake for 45 minutes at 400 degrees with olive oil, salt, pepper, cumin, and paprika. Easy and has a nice kick to it!
I enjoyed this for dinner on Sunday night and my hubby was almost veggie that night- he had fish along with it.

I like meat too much to give it up - and sadly, my husband prefers meat as an appetizer, meat as an entree and meat for dessert!
So my breakfasts and lunches are more fruits, veggies, complex carbs, so I can enjoy the meat at dinner.

I was vegetarian for about a year, for a guy! haha, this was in high school when I Was young and naive. Now I just like meat too much to give it up. I don't eat a lot of it, and I am usually sure to eat only the lean cuts (obviously when I eat out that's not the case). Like you I like to know where my meat comes from, and I prefer to buy organic or natural!
I am not a huge meat eater but tend to choose veggies over meat. I don't believe in cutting out any food groups - everything in moderation I say!
The sweet potatoes look delish!! YUMMY meal. From the blog name, you can kinda tell I'm vegan. I did it for health reasons (migraines, etc). I have never felt better. It's not a lifestyle for everyone, though.. I would never try to push it on someone. It's my personal choice and seems to work.

HAHAHAHA. Oh my god, I laughed so hard at this. So did my boyfriend. We've both been on and off vegetarians, so we know what it's like.

I am not a HUGE meat person but sometimes I crave a steak and go for it.
I don't go out of my way to avoid meat but sometimes I can go a few days without eating any.

I tryed being a vegetarian for awhile, but I don't think I was doing it right because I ended up gaining weight-not fun! Now, I am back to being a meat eater, but I always prefer veggies over meat. :)
Thanks for sharing all your views. I think being a vegetarian or a vegan is a serious decision and I appreciate that everyone has different opinions! That's what makes this fun;)
