Since the weekend got away from me, I ended up cooking a few things on Monday and Tuesday...really late at night. I am also using a few quick and easy helpers to get me through the week. Here are some of the things I made in a rush to feed our family:
Organic chicken thighs coated in eggwash and whole wheat flower with garlic and stewed tomato topping. I used Rotel for the tomato part and gave it a spicy kick! Please disregard the pile of funky juice on the top!
Sesame lime and olive oil roasted brussels sprouts- so easy and so good! We really enjoyed the sprouts when we went out to dinner and I wanted to replicate them without the bottle of oil.
Trader Joe's Mushroom Tortellini for an easy carb to go with meals. I love that these come dry and cook in 15 minutes, flat!A new Odwalla smoothie to use as a base for smoothies for the husband and as a base for my protein cookies! This does have 190 cals per serving with 10 grams of protein, so a small splash goes a long way, in my opinion.

For a quick meal I toss together a pasta, or throw a Ristorante thin crust spinach pizza in the oven. I also love a quick homemade soup, and a tuna or grilled cheese sandwich.
You know, I have never had Brussell Sprouts!! Even as a kid. But I picked some up the other day, and was thinking of roasting or sauteeing them - looking forward to it :).
Hmmm...quick eats - lots and anything - I have a George Foreman grill so it only takes minutes to grill a piece of chicken, fish or something. That with a (whack) of veggies steamed or sauteed (my fav in olive oil) with some sweet potatoe fries also done in the skillet is delish :).
Also, love canned tuna ...oh and Spaghetti squash in the microwave for about 8 mins, then scooped out with a (whack again) load- of veggies (toooo much usually!) and smoothered in spaghetti sauce...mmmmm
I love Jolene's idea of the grilled cheese though...maybe tommorow...

I love anything that has the word "Panini" in it lol....
and frozen meals are pretty good too, like Amy's but I am not sure how quick it since it takes me an hour to heat up a burrito in my oven! lol
