I'm always just about a couple of days behind so it's perfectly appropriate that I post about my weekend on Monday night at 10:00 PM, when most of my readers will get to it on Tuesday morning. I'm smart like that.
Anyways, I hope you had a nice weekend! Mine was not really relaxing, but we got shiz done and for that I am thankful. Here is my weekend in numbers:
2: Number of waffles consumed this weekend for breakfast
6: Number of home improvement stores visited this weekend. If anyone knows me, this is a big deal. I get the cold sweats and feel sick to my stomach in these places, but it had to be done and I'm so excited for the renovations coming to our house!
I got a little bit of cabin fever in the car if you can't tell ;)
4: Number of walks taken with my furball.

Fall Meals
Tonight we came home with a mission to get out of the house ASAP! We went to Best Buy to play with the toys they have and it's my favorite kind of trip- a walking excursion! First we had another edition of 10 minute meals. Sitting at this little bar area is a huge upgrade from standing while eating....if only his mom knew. (HI if you're reading!)
This blurry mid-action shop is ground turkey stirfry with soba noodles, mixed veggies, lots of dill, lemon, and peanut sauce. Of course there are olives for garnish because we are klassy.
For my dinner, I decided to mix up the infamous pumpkin butter in a savory way. I'm pretty sure I didn't invent this, but I would like to think I did. And if it's nasty, then it wasn't me.
Ingredients: - Orowheat sandwich thin
- ~1 tbsp pumpkin butter
- Lettuce
- Slice of Provolone cheese
- Roasted chicken
- Granny smith apple slices
- Cilantro
Smoosh together and eat! It's kind of like Thanksgiving, minus the dysfunctional family.
You may be wondering what we bought at Best Buy- the answer is nothing. We did spend an hour there and I got restless. I felt like a dude shopping with my girlfriend at the mall. Except this time there were only TV screens and no shoes
And I was not nearly as excited as this guy.
Do you go shopping with your significant other? Do you like 'boy' stores?
I don't. I hate Home Depot and Best Buy. There- I said it!

Just Another Day
Today started out like any other day, except for I woke up without an alarm and actually hopped out of bed instead of being forced out. Stranger things have happened.
For lunch I was excited to used my new golden mango, grapefruit half, cucumber, sugar snap peas, and spinach to make a crazy salad:
If you can't tell, the container holds about 3 pounds of food and I filled it to the top and added some honey mustard dressing. I was a wimp and could only get through half of this ruffage. I filled the void with almonds and more junk a couple of hours later.
Tonight for dinner, we had his and hers dinners. Hubby enjoyed the chicken I made last night at 11:00 PM along with sweet potato fries and wedges and wilted spinach. I think he liked it!
For my dinner, I wasn't feeling the meat and had ketchup and tabasco with a side of butternut squash, spinach and unpictured sugarsnap peas, hummus, and pita chips.
We went for a nice much-needed walk for a little attitude adjustment for me and for some mouthwash for both of us! I came home and busted out some Wednesday Protein Cookie Ingredients:My papa gave me this beautiful pomegranate:
I mutilated it:
And my Wednesday crack of dawn breakfast is born!
I think I missed my Sunday cooking edition- in fact I know I did, so I'll be back tomorrow to show you what I'm obsessing over this week!

I would walk 500 miles
Remember that silly song that would get stuck in your head from the early 90s? That is how I sum up my evening!
We are having unseasonably warm weather here. It was in the 70s and I was aching to play in the sunshine but had to stay inside to work. My day was super busy from the moment I got in and before I knew it, it was already 3:30. We got a notice that our server was going down and 4:30 and since I am useless without an internet connection, it was time to go home!
Sorry, I'm still not good at taking pictures. I had all good intentions by bringing my camera, but just didn't have the time. Always next time, right? Here were a few highlights of today's eats:
My fiance and I have been talking evening walks lately- you know, how they recommend old people should to get in some activity? We walked for 2 hours and 10 minutes, covering the trails in our area. The sky was so beautiful and filled with stars. While he stopped to run a quick errand, I used the surroundings and did a 'school workout' which included running up staircases and then running around the block. I kept my watch on the whole time and it clocked in a burn at 580 calories- this is a crazy high rate, but perhaps it's feasible. Do you find your watch is pretty accurate? Sometimes I wear my monitor for random physical activities just to test it.
